I got a craving for pineapple in pancakes, and this retro idea popped into my head. I haven't had pineapple upside-down cake in decades, but why not pancakes? Oh, they were so yummy! And sweet enough that they didn't need syrup.
I melted some brown sugar in butter and browned the pineapple slices in it, giving them a lovely glaze. Then I ladled out the pancakes and dropped a ring and a cherry on each while the batter was still very "raw." Flipped when they were ready, then flipped back up for serving. One got a little toasty but that's how the Wabbit likes 'em. Next time I'll make them smaller, but there definitely will be a next time. Easy as, well, pancakes!
